Fn = mgcosθ
Just think about it, there is only a normal force when there is a supporting surface, cos0=1 and cos90=0, so as the angle increases, normal force decreases.
I think you found the Fn=mg/cosθ from page 30 of the CC which is a specific example having to do with centripetal force. Page 24 and 25 has the explanation of normal force.
