Is it a good idea to use old Verbal Reasoning practice exams from AAMC as extra practice for CARS?
I have heard that pre-2015 VR is still pretty similar to CARS.

Yes definitely, even though the CARS section has changed slightly, old VR passages are still a great practice resource.
