This one is very tricky!
Based on information in the passage, the statement "a class is given a demonstration" to me provides the greatest indication as to what gas is evolved during this chemical reaction.
No information about safety equipment is provided in the passage, so this tells me that the chemical reaction must produce a gas that is safe to produce as "a rapid evolution" (i.e. it's not going to explode, not going to be corrosive, etc.). Everything EXCEPT for CO2 is NOT SAFE in such a manner.
That's how I would approach the paragraph. It's very very tricky.
You can also write out the full chemical reactions, but that takes a really long time to do.
