I realize that certain (polar) amino acids can H-bond due to their side chains, but why cant ALL amino acids participate in H-bonding due to the amino group on their backbone?

Hi Jenna,

all amino acid residues are capable of H-bonding using the amino group on the backbone (not counting side-chains). This is what contributes to the secondary structure of proteins.
