What is the difference between speciation and adaptive radiation? The way I understand it is that they both involve the process of one species evolving into another. What's the major difference between them?

Speciation is the formation of two distinct species from one original species that are reproductively isolated from one another. Adaptive radiation is a subset of speciation. In adaptive radiation, there are generally multiple speciation events originating from a single species. It is a burst of evolution, or an increase in the rate of speciation, creating several new species out of a single parent species.
